Mercedes Vignioble graduated in dietetics from the Institut Paul Lambin in Brussels in 1996, and continued her training with a Master’s degree in Biomedical Sciences from the Université Catholique de Louvain in 1998. Since then, she has worked as a clinical dietician in the nephrology department at Cliniques Universitaires Saint-Luc in Brussels.

For 15 years, she coordinated the GDN (groupe des diététiciens en néphrologie) in French-speaking Belgium. She also completed a catering qualification in 2020, enabling her to combine theory with practice.
